Black Bean, Corn, & Quinoa Salad with Shredded Chicken

Super easy E dinner! But why is it so easy? If you have the ingredients prepped in advance, you can pull the cooked quinoa from the freezer, the chopped onions from the freezer, the chopped peppers from the fridge, the cooked protein from the fridge. Open some cans. Add seasonings. Combine. Dinner is ready.

Ingredients

  • 1 TBL Olive Oil
  • 1 Small onion chopped
  • 1 Red Pepper chopped
  • 1 Orange pepper chopped
  • 1 Lime juiced
  • 1/3 cup Cilantro chopped
  • 3/4 cup Whole Kernel Corn
  • 1 15 oz can Black Beans
  • 1- 2 cups Quinoa cooked
  • 1 TBL Taco seasoning
  • 1 TBL Chili Powder
  • 1 tsp Cumin
  • 2 cups Chicken Breast shredded

Instructions

  • In a skillet over med high heat sauté the onion with the oil. Add the red pepper, orange pepper and cook for 3-4 minutes then add the lime juice, cilantro, corn, black beans, cooked quinoa, taco seasoning, chili powder, cumin, cooked shredded chicken. (I use my crockpot shredded chickeor you could use lean ground turkey breast.

Notes

Easy lunch- my black bean and corn quinoa can be frozen in single portions. Grab a bag from the freezer the night before or the morning of. Microwave it, there's lunch! 
It's yummy on a green romaine salad too. Add my creamy MCT oil vinaigrette!
