Blueberry Scone

This favorite recipe is from Amy! (amylovesnature) The Downton Abbey Blueberry Scone! Many of you have made this previously from Amy's blog. She no longer has the blog and has given me permission to share. I prefer making mine in the air fryer. This is a single serve recipe as written and is a THM FP.   • 1/4 cup THM Baking Blend
  • 1/2 teaspoon baking powder
  • Dash mineral salt
  • 1 tablespoon THM Gentle Sweet
  • 1 teaspoon butter or coconut oil
  • 1 egg white 1 egg white = 2 TBL carton egg whites
  • Dash almond milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest optional (I use a couple drops of lemon essential oil!)
  • 1/4 cup blueberries fresh or frozen


If you want to double or quadruple the recipe like I do, adjust the servings above!

  • If baking in the oven preheat the oven to 400°. (I use my Pampered Chef air fryer!)
  • Mix the baking blend, baking powder, salt, and sweetener together in a bowl. Add the butter (or coconut oil) and mix together so that it is crumbly and a biscuit – like consistency. I use my pastry cutter.
  • Add the egg white and mix together. If it seems too dry, add a dash of almond milk.
  • Mix in the blueberries – fresh blueberries are amazing, but frozen will work just fine. If you want a lemon taste, add lemon zest or a bit of lemon juice. If you don’t care for lemon, vanilla is great too.
  • I like using a few drops of lemon essential oil. -Becky
  • Place parchment paper on your baking sheet (or air fryer tray) and dump the dough onto it. Form the dough into a square and then cut it through the center to separate into two beautiful triangles
  • Bake in the oven about 15 minutes until just golden. Let cool a bit and enjoy.
  • If using the air fryer, air fry at 400° and check at 5 -7 minutes. Air Fryer times will vary.
