Here's my Drive Thru Sue Salad with a Purist Heart!
I buy the salad kit to save time, but throw away the off plan dressing and toppings.
Sub with these easy options!

  • Chopped Asian Salad Kit 9.5 oz bag at Aldi

Or chop your own veggies

  • Cabbage Shredded
  • Carrots Shredded
  • Romaine Lettuce
  • 1 Green Onion


  • Chicken Cooked
  • 1 TBL Peanuts chopped or
  • 1 TBL Almonds sliced

Make this YUMMY Peanut Dressing


  • Throw away the wontons & off plan dressing. Add some chopped peanuts or sliced almonds for crunch. Add chicken for protein! (The Peanut Popper Chicken page 164 from THM cookbook is delicious!)
  • No salad kit. No problem! Shred the cabbage in your food processor with the slicing attachment. (Not the shredding attachment) add some shredded carrots, a little romaine, and a green onion.

For the Peanut Dressing

  • Combine all the ingredients except the xanthan. Mix. Then add xanthan while whisking. Let set for a few minutes to thicken.
