Coach Becky's No-Bake Cheesecake

Most folks know about my ice cream addiction! Who knew, even before my addiction to ice cream, it was cheesecake! With cheesecake I didn't need an ice cream maker. Years ago as a THM beginner, I was often frustrated with how my desserts turned out as I was adapting to a sugar free lifestyle. My no-bake cheesecake is what kept me on plan! If you're intimidated about making dessert this recipe is for you! Check out the video below. It's so easy and it's no fuss. It literally comes together in just a few minutes unless of course you're making toppings. Don't forget the toppings. I make my caramel sauce in my Pampered Chef Deluxe Cooking Blender. Place the ingredients in the blender and let the blender do the cooking and mixing!

Ingredients

No-Bake Chocolate Peanut Butter Cheese Cake with a Brownie Crust ~THM S

Instructions

No-Bake Plain Cheesecake

  • If using a crust (Oreo or Graham Cracker) make those crumbs first. See recipe links above. Graham cracker crumbs will need to cool a bit.
  • Beat the softened cream cheese with a mixer for 3 minutes.
  • While the mixer is still running, add the rest of the cheesecake ingredients.
  • If using this as a dessert, I skip the whey protein.
  • Mix well.
  • Add 2 TBL of crust crumbs into each cup. (Or make it as thick as you'd like!)
  • Portion into individual servings. I use the 5.5 oz. portion cups or the 4 oz. mason jelly jars.
  • Freeze or Refrigerate.
  • I like to eat it when it is partially thawed from the freezer.
  • You can eat it plain
  • or top with fresh strawberries or raspberries.

No-Bake Caramel Cheesecake (or Salted Caramel or Caramel Pecan)

  • Make the Graham Cracker Crust and cool.
  • Make the caramel sauce. Add more salt if making salted caramel.
  • Follow the same instructions above to make the cheesecake.
    Remember, No lemon juice needed in caramel cheesecake.
  • Place crust crumbs in cup and add the cheesecake mixture.
  • Top with caramel sauce .
  • Add OPTIONAL roasted pecans.

No-Bake Chocolate Peanut Butter Cheese Cake with a Brownie Crust Instructions

  • First have your brownies ready, junkie butter ready, and chocolate syrup made.
  • Use an on plan brownie as a crust. Make the cheesecake and mix in the junkie peanut butter with the cheesecake. Assemble. Top with chocolate sauce.
    You can use any on plan brownie, peanut butter, or chocolate sauce!

You can do so much more with the plain base! Be creative!

  •  If you want any of these to be a bit creamier you can add whipped heavy whipping cream. (You must whip it to whipped cream first before adding it to the recipe.)

No-Bake Plain Cheesecake Recipe as a Fruit Dip

  • If you'd like it to be more like a fruit dip add 1 1/2 cups whipped cream. (Heavy Whipping cream, already whipped) Just refrigerate, no need to freeze.
    (But if you would like to freeze it, it can be frozen.)
