Cookies and Cream Ice Cream
This Vanilla Ice Cream recipe is the recipe that gave me the nickname "Ice Cream Becky." Even Pearl and Serene have said it's the best ice cream they ever had! That made my day. In June 2019, I got to meet the authors of Trim Healthy Mama, and I took them some of my ice cream. If you are a lover of that sweet sugary cookie called "the Oreo" you'll love this. Keep it soft and enjoy like an oreo blizzard. Or you can mix and freeze and have hand dipped cookies and cream ice cream! It is 100% kid approved.

Ingredients
- 1 cup almond milk
- 1 cup half & half
- 2 cups heavy whipping cream
- 1/2 cup cottage cheese
- 1/2 cup Gentle Sweet with Xylitol, will keep your ice cream scoopable from the freezer
- 2 tsp pure Mexican vanilla
- 1/8 tsp mineral salt
- 1 Tbsp vegetable glycerin
- 1/2 tsp THM gluccie
Oreo Topping
Instructions
- FIRST Blend everything EXCEPT the gluccie, in the blender for 30 seconds. (I use a Vitamix)
- While blender is running on lowest setting add your gluccie. Mix for another 30 seconds.
- Turn your counter top ice cream maker on and pour mixture in to it.
- Spin 20-25 minutes in countertop ice cream maker.
Add Oreo Topping
- Keep it soft and enjoy like an oreo blizzard. Or you can mix and freeze and have hand dipped cookies and cream ice cream!
Storage of your ice cream
- Portion into 5.5 oz portion cups for easy grab and go. Or store in a shallow container for easy thawing. But if you use THM Gentle Sweet with Xylitol it will stay soft in the freezer.

Do you think that Pyure would work instead of Gentle Sweet in this recipe? I think I def need this ice cream maker, I will use your affiliate link. Thank you. Love this recipe. My teenage girls are eating so much low carb store bought ice cream that it’s crazy. I should be making my own, would be far better and save dollars.
The short answer is yes. You can sub the sweetener of your choice. BUT… Pyure is erythritol so it does have a tendency to get rock hard in the freezer. I use gentle sweet with xylitol for different reasons. It keeps the ice cream scoopable from the freezer, and my family doesn’t like the cool aftertaste that they get from Pyure. Some folks measure Pyure like Gentle Sweet, but I thinks it’s more like Super Sweet. Taste varies from person to person. I hope this is helpful.
And yes I used to buy halo top to take care of my ice cream habit before I realized that I could have purchased 2-3 ice cream makers with that $$. 🙂

The glycerin is to prevent the ice cream from getting iced in the freezer. It helps keep it scoopable. The gluccie acts as a thickener.
