Giant Caramel Apple Pancake

  • 2 cups rolled oats
  • 2 TBL THM super sweet
  • 4 tsp baking powder
  • 1 heaping TBL of apple pie spice
  • 1 heaping cup lowfat cottage cheese I use 2% Daisy brand
  • 1 heaping cup of no sugar added applesauce
  • 2 cups egg whites 1 carton
  • 2 apples diced
  • 1 tsp THM Caramel Burst Extract


  • Preheat oven to 350°
  • In a hi powered blender, combine the dry ingredients. The rolled oats, super sweet, baking powder, and apple pie spice.
  • Blend well.
  • Then add wet ingredients. The cottage cheese, no sugar added applesauce, egg whites, and caramel extract.
  • After blending, add your diced apples to the batter.
  • Pour in a well greased 9 x 13 pan. Bake for 45-50 minutes on 350°.
  • Top w no sugar added apple butter!



Note: If you don’t have apple pie spice, use 1 tsp nutmeg and 2 tsp cinnamon.
And if you're using THM caramel burst extract, only 1/2 tsp is needed.
