  • 16 oz dry navy beans
  • 2 cups water
  • 12 oz cooked bacon optional, makes the recipe a THM XO
  • 1 med onion chopped
  • 1 cup gentle sweet
  • 1 tsp molasses
  • 1 TBL Dijon mustard
  • 1 TBL dry mustard
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 cup pancake syrup THM Plan approved
  • 1 cup tomato sauce
  • drizzle olive oil

  • Soak the dry navy beans in water in the refrigerator overnight. I've heard this is optional when using an instant pot.
  • Drain the beans and place them in the instant pot with the water.
  • If you're fine with having a xo, add the cooked bacon.
  • Mix the gentle sweet and molasses, or just put it in the pot.
  • Add all of the other ingredients.
  • Stir.
  • For safety reasons with cooking beans in a pressure cooker add a drizzle of olive oil.
  • Close it up and cook the beans on high for 30 minutes.
  • Natural pressure release
  • Optional: add salt & pepper before serving.
Do not put the salt and pepper in your instant pot with the beans.

For the pancake syrup, I use the recipe from “A Better Weigh to Healthy” cookbook.
On the Trim Healthy Mama plan this recipe without the bacon is an E recipe. With the bacon, it's a XO.
