Moose Tracks Ice Cream

Who doesn't love chunks of chocolate and veins of peanut butter in their ice cream? It's hard to choose a favorite ice cream flavor, but this one is definitely in my top 5!

For the Ice Cream

  • 1 cup unsweetened almond milk
  • 1 cup half & half
  • 2 cups heavy whipping cream if using a 1.5 qt ice cream maker use 1 cup cream
  • 1/2 cup cottage cheese Daisy 2% is my preferred
  • 1/2 cup gentle sweet with Xylitol, will keep your ice cream scoopable from the freezer
  • 1 egg optional
  • 1 tsp pure Mexican vanilla
  • 1/8 tsp mineral salt
  • 1 TBL vegetable glycerin click on it to see what I use
  • 1/2 tsp THM gluccie

For the chocolate

  • 1/4 cup melted coconut oil I use refined for this
  • 2 TBL Cocoa powder
  • 2 TBL Gentle Sweet

Peanut Butter Topping

  • 1/4 - 1/2 cup No Sugar Added Peanut Butter


For the ice cream

  • FIRST Blend all the ingredients in the blender EXCEPT the gluccie for 15 seconds.
  • While blender is running on lowest setting add your gluccie. Blend another 15 seconds. (This is if you're using a high powered blender. You may need to blend a bit more if you don't have a high powered blender.)
  • Turn your counter top ice cream maker on and pour mixture in to it.
  • Spin 20-25 minutes in countertop ice cream maker.

For the topping and mix-ins

  • While Ice Cream is spinning- combine chocolate ingredients
  • Transfer ice cream to a shallow container. (a 9x13 is good.)
  • Stir the chocolate and drizzle over ice cream
  • Then drizzle the all natural no sugar added peanut butter onto the ice cream. You can pour right from the jar. If it's too thick, nuke in the microwave for just a few seconds.
  • Break up chocolate pieces with your spatula. Stir. Swirl. Don't over mix. You want chunks.
  • Optional - You can also pour the chocolate in the ice cream maker during the last minute while the ice cream maker is still running. This doesn't give big pieces.
  • Place ice cream in the freezer for a 30 minutes or more to set up a bit more and then serve. Or portion in 5.5 oz. cups and store in freezer. See link above under the "equipment" for the cups.



A 2 quart ice cream maker works well for this recipe. If you only have a 1.5 QT maker use only 1 cup of cream in the recipe. The video above is using a 1.5 QT. I now only use my 2 quart maker because I have 2 of them.

Serve immediately OR freeze the whole thing in a shallow container.
Alternative Storage: portion out & freeze in 5.5 oz cups for easy grab n go.
