  • FIRST Blend everything in the blender EXCEPT the gluccie, peppermint oil, and peppermint candies.
  • While blender is running on lowest setting add your gluccie.
  • Now if you are using essential oil and if your blender canister is plastic, move your ice cream mixture to a stainless steel bowl. Then add the peppermint oil. Mix with metal spoon. This is to prevent your canister from retaining the peppermint smell for days. No need to do this if using peppermint extract. If using peppermint extract use 1-2 tsp. They vary in strength from brand to brand so you'll need to taste test.
  • Turn your counter top ice cream maker on and pour mixture into it.
  • Spin 25 minutes in countertop ice cream maker.
  • Transfer ice cream into a shallow container.
  • Or portion ice cream into 5.5 oz portion cups
  • Crush the peppermints in a ziplock bag with a meat tenderizer.
  • Top ice cream with peppermint candies. See video below for details.

Notes

Note 1: If using the 1.5 quart ice cream maker and if it is too much batter for your ice cream maker you can use it to make a Peppermint Mocha! Make it with coffee and trim healthy mama chocolate whey protein powder. 
Note: 2 If you’d like to lighten up this recipe you can use 2 cups half and half and only 1 cup of heavy whipping cream. It will still be delicious.
Note 3: Don’t have cottage cheese? You can use 4 egg yolks instead! It’s delicious. No need to cook it first.
