Raspberry Swirl Ice Cream

My friend Mandy from Texas Trimmy, introduced me to this fabulous raspberry sauce! It pairs well with my ice cream. You can eat this ice cream right from the ice cream maker for a soft serve type. If you prefer hand dipped, freeze it for several hours. Top with chocolate chips! This raspberry sauce recipe makes more than what you'll need for the ice cream. It makes a delicious topping for yogurt, angel food cake, etc. But if you don't want extra raspberry sauce you can just make half of hte sauce recipe. Click on the highlighted ingredients for links.

Raspberry Sauce

Raspberry Sauce

  • First, make your raspberry sauce so it can thicken and cool while making your ice cream.
  • Place the raspberries in a saucepan with the water. Cook it down for 10 minutes. Peek at it at after 7 minutes. You want to cook it until it's mushy.
  • Remove the seeds. I use a mesh colander.
  • Now add the gentle sweet. Stir with a whisk until combined. Add the gluccie while continuing to whisk until it begins to thicken. Cool.

Ice Cream

  • For the ice cream, FIRST Blend all the ice cream ingredients EXCEPT the gluccie. While blender is running on lowest setting add your gluccie. Turn your counter top ice cream maker on and pour mixture in to it. Spin 20-25 minutes in countertop ice cream maker.

Combining the Ice Cream and Raspberry Sauce

  • Place ice cream in a shallow container. Drizzle the ice cream with 1/2 cup of the cooled raspberry sauce. Swirl it around with a scraper. Don't mix it in completely.

Storage of your ice cream

  • Portion into 5.5 oz portion cups for easy grab and go.
    Or store in a shallow container for easy thawing. But if you use THM Gentle Sweet with Xylitol it will keep it soft in the freezer.


On the Trim Healthy Mama plan this ice cream recipe is a S recipe. However the raspberry sauce is FP. This raspberry sauce recipes makes more than what you will need for the ice cream. I like to eat it on plain non-fat Greek yogurt as a yummy Fuel Pull snack.
