Roasted Okra

My favorite way of having okra is in the air fryer with bacon on the top rack and letting the bacon grease drip down on the okra. But I’m not always cooking bacon. So there’s a butter option too.

  • 12 oz frozen okra pieces
  • nutritional yeast
  • salt
  • pepper
  • garlic powder
  • bacon grease or
  • 1 TBL butter melted
  • Cooking Spray, if you need the recipe to be FP See note below


Air Fryer Option

  • I put the okra in the air fryer frozen. Once the ice has melted off (2-3 minutes) I take it back out of the air fryer, and place it in a bowl.
  • If needed, add more bacon grease that has dripped down in the catching tray. No Bacon? No problem! Use a TBL of melted butter.
  • Dump on the nutritional yeast. Be generous! Sprinkle on the salt, pepper, garlic powder and put it back on the tray.
  • Cook in the air fryer for 15 minutes at 400°
  • Stir after 7 minutes. Continuing to air fry if not crispy at 15 minutes.

Oven option

  • Turn the oven on to 425°
  • Place okra on a baking sheet, and place in the oven to defrost while the oven is preheating.
  • Once the ice is off take it back out of the oven and drizzle with butter or bacon grease.
  • Dump on the nutritional yeast. Sprinkle with salt, pepper, and garlic powder. Stir.
  • Roast for 45-60 minutes, stirring every 15 minutes.


I have been using an air fryer since the beginning of 2019 and I am loving it! Crispy without drying it out! My air fryer has 2 racks, and is large enough to cook protein and veggies at the same time for our family of 5.

On the Trim Healthy Mama plan this is a Deep S recipe. If you need it to be FP fuel, skip the butter and bacon grease. Spray the okra with a bit of cooking spray!
