Smothered Chicken

This tasty chicken is a favorite of my husband's.
It's usually on the rotation for birthday and Valentine's Dinner!

Ingredients

  • 4 Large Chicken Breasts Skinless boneless
  • Olive Oil
  • 1 8 oz package of fresh mushrooms sliced and sautéed
  • Mineral Salt
  • Black Pepper
  • Smoked Paprika
  • Honey Mustard
  • 8 slices bacon cooked
  • 8 cheddar cheese slices

Instructions

  • Preheat the oven to 375.
  • Cut up the chicken breasts to the size that you'd like. I do tenderloin size. Place on a plate and season with the salt, pepper, and smoked paprika.
  • Heat up an ovenproof skillet and drizzle with the olive oil over medium heat. Place tenderloins in pan, seasoned side down. Cook a bit, 3-4 minutes, flip, season the other side too.
  • Once they’ve cooked a bit more, another 3-4 minutes, drizzle with my honey mustard. I brush it on.
  • In another skillet if your mushrooms aren't already cooked, sauté the mushrooms. I have my bacon already cooked too.
  • Now add the mushrooms & bacon on the chicken.
  • Cover with Cheddar Cheese Slices. I cut my slices in half. You can also use shredded cheddar.
  • I place my skillet in a preheated 375 oven, and bake it for 7-10 minutes. Be careful when removing from the oven.
  • Serve with additional honey mustard for dipping.

  • Eliminate the cheese, and when making the honey mustard, use homemade mayo. See Honey Mustard Recipe notes for that info.

Notes

Need easy sides? I serve with salad and green beans. I sauté extra mushrooms to add to the green beans, and I cook extra bacon for the salad too!
