Stuffed Mushrooms

One of Coach Becky's favorite superfoods, mushrooms!

  • 12 button mushrooms
  • 1 TBL butter
  • 1 oz cream cheese
  • 1 slice bacon
  • 1/4 cup salad shrimp cooked
  • 1/4 cup chicken broth
  • 2 TBL Butter melted
  • 1/4 cup Mozzarella or Gouda shredded or 12 small slices

Parmesan Crumbs

  • 2 TBL THM baking blend
  • 2 TBL Parmesan
  • 3/4 tsp Italian Seasoning
  • 1/2 tsp parsley
  • 1/4 tsp garlic powder
  • salt
  • black pepper


  • Preheat oven to 450°
  • Clean the mushrooms and remove the stems.
  • Chop the stems extremely fine. Sauté the stems in a skillet with the TBL of butter.
  • Mix up the Parmesan Crumbs. Set aside.
  • Cut the bacon to bits. Cut up the salad shrimp.
  • Once the mushroom stems are sautéed, add the cream cheese. Stir.
  • Move to mixing bowl.
  • Add the bacon bits, shrimp, parmesan crumbs, and broth.
  • Stuff each mushroom.
  • Drizzle with melted butter.
  • Top with mozzarella or Gouda.
  • Bake 12-15 minutes.
