This tasty chicken is a favorite of my husband's. It's usually on the rotation for birthday and Valentine's Dinner!Need a Deep S option? See the instructions of this recipe.
Cut up the chicken breasts to the size that you'd like. I do tenderloin size. Place on a plate and season with the salt, pepper, and smoked paprika.
Heat up an ovenproof skillet and drizzle with the olive oil over medium heat. Place tenderloins in pan, seasoned side down. Cook a bit, 3-4 minutes, flip, season the other side too.
Once they’ve cooked a bit more, another 3-4 minutes, drizzle with my honey mustard. I brush it on.
In another skillet if your mushrooms aren't already cooked, sauté the mushrooms. I have my bacon already cooked too.
Now add the mushrooms & bacon on the chicken.
Cover with Cheddar Cheese Slices. I cut my slices in half. You can also use shredded cheddar.
I place my skillet in a preheated 375 oven, and bake it for 7-10 minutes. Be careful when removing from the oven.
Serve with additional honey mustard for dipping.

Eliminate the cheese, and when making the honey mustard, use homemade mayo. See Honey Mustard Recipe notes for that info.

Need easy sides? I serve with salad and green beans. I sauté extra mushrooms to add to the green beans, and I cook extra bacon for the salad too!
